Turning off the autopilot
We all have an element of autopilot in our businesses; a mixture of conventional wisdom and years of experience that tell us – this is the way to do it. We rarely find the time or energy to challenge the autopilot.
By getting stuck into your data and under the hood of team capability, you can scrutinise every hour of labour spend. For example, how many hours of prep are really required in the kitchen for 5k of food sales? It is likely to vary significantly less for a 2k day, but our autopilot might say differently.
