Why are the small companies more successful than big ones?   In the hospitality sector the progressive small companies are outperforming the large ones to a significant extent.While of course the hospitality sector is just as much about site economics as scale economics, I have long puzzled about why this is the case. As a software supplier (and a small operator of 3 sites) who therefore gets to talk to lots of operators, my thesis is as follows:   The advantages of the large operators (for which I am defining as 100+ sites) include many things such as focused marketing, category management, menu engineering, and analysis. July Sales Figures

  5.4% rise in food and drink sales in July 2019.   According to analysis of more than 100 restaurants, pubs, bars, hotels and cafes that use S4labour software, sales of both food and drink were up 5.4% in July 2019 compared to July 2018.   Both wet and dry led operations saw positive like for likes, but it was food focused businesses that performed particularly well. Overall, sales in dry led establishments went up by an impressive 8.3%, the largest hike in like for like sales in 2019. The bumper month was split evenly between growth in food and drink sales, up 8.2% and 8.5% respectively.   Unlike the same period the year before, the inconsistent weather may have been enough to deter many from lighting the BBQ and opting for an out of home eating experience instead.   Improved sales figures were also a feature in drink focused businesses, however the growth here was largely driven by food sales. June Sales Figures

  3.3% fall in like for like hospitality sales in June 2019.   According to analysis of more than 100 organisations that use S4labour software, sales of both food and drink across the sector took a hit this June. Tough trading condition coupled with lower temperatures, higher levels of rainfall and being compared to the same trading period in 2018 where the Fifa World Cup was in full flow, has meant many operators struggled to reproduce the same performance in June 2019 as they did in June 2018.     The story in venues where drinks make up the majority of sales was an overall drop off by 4.6%, compared to June 2018.     Food led business also saw a drop in like for like sales, however the impact was less acute. Food sales remained relatively steady with only a 0.3% decline, yet drink sales fell by 3.9%.   Food sales in food focused pubs have been quite resilient this year, while drink focused operators have experienced much more fluctuation and have been more susceptible to exterior factors.

May Sales Figures

Drink sales drive a 1% rise in sales for hospitality revenues in May 2019.   According to analysis of more than 100 organisations that use S4labour software, a spike in sales at drink focused venues drove an overall 1% rise in sales across the sector. The latest sales figures show a resilient bounce back from Aprils sales dip and encouraging results for drink focused business going forward.   The success of British football clubs in the later stages of the Champions League this year helped push an overall 2.3% rises in sales at drinks business. While food sales slipped by 1.2% in drinks venues, there was a very encouraging uplift of 3.1% in the sale of drink.   The success in drink focused businesses was at the expense of some food focused establishments where there were slightly less positive results. A boost of 0.5% in food sales was not enough to stop an overall drop off of 0.4% in sales, owing to the decline of 1.5% in drink sales. The warm weather was possibly a factor in driving some diners to light the BBQ at home rather than eating out.

0.7% Fall in Sales in April Despite Good Easter Weather   According to analysis of more than 100 organisations that use S4labour software, operators had slightly weaker sales than in the same month the previous year. Whilst the first quarter of 2019 had seen resilient figures for both food and drink, A sunny Easter bank holiday wasn’t enough to out perform April last year. April 2019 sales figures could be summarised by a weakening of food sales, with some gains being made in drink sales for dry let operators.   The sales of food plateaued in both wet and dry focused business, with a slight overall drop off of 1.8% compared to like for like sales in April 2018. However, worst hit were drink focused venues where food sales declined by 5.7%. Dry let business, while sales also dipped, only saw a 0.3% decline on April last year.    Despite this, drink sales in food focused business bucked the trend with an 4.1% uplift in like for like sales. March Sales Figures

Buoyant Sales performance for Hospitality Operators In March 2019.   According to an analysis of more than 100 organisations that use S4Labour software, operators had strong sales during March 2019, with food sales and drink sales up in both dry-led and in wet-let sites.   Going into April’s annual National Price Hike Day and an increase in The National Living Wage, the sector saw an overall picture of 3.7% positive growth compared to like for like sales from the same month last year. The most impressive results came from venues that were food-led. In venues where sales were predominantly made up from food, both food and drink sales were up an impressive 5.4%.   Drink-focused businesses also fared well, if not as strongly as food focused business. The sales growth in wet-led venues were 2.4% on like for like sales from the same month last year, made up predominantly by a 2.7% uplift in drink sales and bolstered by a 0.8% increase in food sales.

February Sales Figures

Buoyancy in the hospitality sector, according to recent figures from Catton Hospitality. According to an analysis of more than 100 organisations that use S4labour software, operators bounced back from the January blues to see strong sales figures in February 2019 compared with like for like figures from February 2018.    Overall, sites achieved an encouraging 2.5% increase in like for like sales on February the previous year. Like recent months, it was food-focused businesses who saw the greatest increases. Drink sales in food-focused pubs delivered an uplift of 7.6%, accounting for the greatest proportion of growth within the analysis. Strong drink sales were not at the sacrifice of revenue from food, where sales also grew by 2.4%.    There were also modest increases in sales performances from drink focused business. Drink sales in wet-let business grew by 1.3%. However they were slightly hindered by fall in food sales. Overall, sales in drink focused business were up by just short of 1% on last year.

January Sales Figures

According to an analysis of more than 100 organisations that use S4Labour software, operators faced challenging condition during the month of January. Against the back drop of Dry January, Blue Monday and Veganuary, there was a slight 0.9% drop in like-for-likes sales. Following on from a strong Christmas period, wet-led venues bore the brunt of the fall, with falls in drink sales of 2.8% and a slight drop of 1.8% in food sales.   Food-focused businesses fared better, where the analysis shows year on year sales grew by 1.0%, made up predominantly by a 1.3% uplift in food sales and aided by a 0.6% increase in drink sales.   There were real gains to be had on New Years Day this year, where operators saw an overall 5.7% increase in sales over the same day the previous year. This figure was boosted by particularly strong food sales in both drink and food focused business.

Analysis of over 100 organisations that use S4Labour software found the decline was driven by lower food sales, with operators typically seeing a 2% fall. Following a summer of high spending, its likely consumers are now cutting back. Although many will be cheered by this week’s business rates adjustment announcements, wet-led operators seem to be facing a tougher autumn with like for like food revenues down by 3.7%. August Sales Soar for S4Labour Customers

August was another excellent month for S4Labour customers, and the wider UK hospitality industry, our latest research has found. Like for like sales were up on average 3.9% compared to 2017’s revenues, as businesses across all sectors and trading styles enjoyed an increase in both wet and dry takings.  Drink sales were the main driver behind the strong results, with food-focused operators seeing a 5.6% rise on 2017’s level and wet-led venues not far behind with a 5.2% increase. Food revenues were also very healthy – up on average 1.8%. Again dry-led sites were the biggest winners, enjoying a 1.8% boost compared to last year. Drink-led operators were again not far behind, with on average a 1.4% rise.  This rounds off an extremely good summer for revenues across British hospitality. May and June both saw like for like revenues up in excess of 5%, although July brought a slight dip in sales. Much of the strong summer trading has been ascribed to fine weather and the World Cup, but as August’s weather was variable and England’s exploits are now just a memory, operators will be cheered by the continued positive trend.

Quieter July for UK Hospitality

Following a superb early summer, July was a quieter month for UK hospitality.   May and June both saw like for like sales up in excess of 5%, but this rising trend has been arrested, according to our latest research. Analysis of over 100 organisations using our S4Labour software across all industry sectors found on average a 0.3% reduction in revenues compared to July 2017.  The slight decline was driven by lower food sales, as venues saw on average a 2.5% decrease. With hot weather likely impacting appetites, wet-led sites were most impacted, typically seeing a 5.2% fall. This reduction was to an extent mitigated by an increase in drink sales of on average 1.0%, although with this figure less impressive than in preceding months, it seems likely that the period of high consumer spending that characterised the early summer has come to an end.

June was a superb month for sales for S4Labour customers, our latest analysis has found.  Research into over 100 organisations across all industry sectors revealed that average like for like revenues were up 5.4%. Recent fine weather and the start of the World Cup are likely factors in the increase, with drink sales 6.7% and food sales 3.3% up on average. Excellent May Trading for S4Labour Customers

May was an excellent month for the UK hospitality industry with like for like sales across the industry up 5% on 2017 levels, our latest research has found.  Analysis of over 100 organisations using our S4Labour scheduling and HR software revealed that strong drink sales – likely bolstered by fine weather and the Royal Wedding effect – were the primary factor in the overall good performance.  Food-led venues enjoyed an 8.5% increase in drink trade, while wet-focused sites were up 7.7% on average.  Operators also saw a rise in food revenues – albeit a small one – with an overall 0.1% increase recorded across all businesses surveyed and dry-led sites faring slightly better in this regard.  June sees the start of the World Cup and many in hospitality will be anticipating a continuation of May’s good results for the industry (even if not for the England team).  By identifying and correcting times of sub-optimal staffing, S4Labour helps its clients increase sales and improve service, as well as reduce labour costs. February Like for Likes Up for S4Labour Customers

Analysis of over 100 organisations using S4Labour showed positive sales growth for the majority of operators last month.  Our latest research into revenues at operators across all sectors of hospitality revealed an average increase in sales of 0.2% on February 2017 levels.  This was primarily driven by wet-led businesses, which enjoyed on average a 4.8% uplift across their sites. Food-focused venues typically experienced a tougher month, seeing on average a 0.6% fall in sales. The restaurant and casual dining sectors were particularly badly hit by the severe weather that arrived towards the end of the month, with many sites struggling with cancellations and delivery logistics, and some closing outright. The Castle Inn in Spofforth, North Yorkshire, part of out own Malvern Inns brand, saw temperatures 13 degrees colder than last year on the final day of the month and food sales 60% down as a result. Hospitality venues can look forward to Valentine’s Day as an opportunity for increased footfall and boosted sales. However, Valentine’s Day isn’t always a day that managers love. Here’s our advice on how to make this year’s event a success. Boost Sales Valentine’s Day is a great way for operators to drive increased sales. Being a special occasion, food menus should be specially made for the day. Create one-off dishes and consider adding more expensive ingredients to menu items that you wouldn’t otherwise be able to serve. Bubbles must be on the menu, obviously displayed to the customer, and possibly part of a promotional offer. Ensure that you offer a range of sparkling wine, from accessible prosecco to high-end champagne. Our Research Featured in the Morning Advertiser – Christmas Day Significance Grows

By working intimately with some of hospitality’s biggest and best operators, we are able to gain valuable insight into the industry’s trading conditions and trends.  Taking data from over 100 organisations who use our S4Labour labour management software, our new research, which has been featured in the Morning Advertiser, has revealed that Christmas Day is an increasingly significant contributor to operators’ revenues. The research, considering venues across a full range of industry sectors, found that like-for-like sales on Christmas Day 2017 were up on average 21.2% on 2016 in food-led sites. Wet-led operators saw on average a 15.4% increase. Reports published by two of the pub sector’s biggest firms support our findings. Marston’s and Mitchells and Butlers (M&B) both enjoyed like-for-like increased sales of 5.9% across their 1,550 and 1,780 respective sites. Marston’s saw Christmas Day sales in excess of £4 million for the first time, while M&B served over 225,000 meals on the day. Our analysis also revealed that sites that opened on Christmas Day were in an overall minority. 35.5% of wet-led venues opened for business, while 51.5% of food-led sites welcomed customers. Top Tips for Upselling

January brings a sharp decline in sales across hospitality, and optimising sales revenue is a hot topic once again. Our recent analysis found that certain industry sectors have suffered as much as a 60% drop in sales this month compared to December trading. If businesses are to thrive at this barren time of year, upping customers’ spend per head is an important strategy. Here are our top tips for upselling for managers and their teams. Cross-selling and the ‘Rule of 25’ True upselling, convincing a buyer to purchase a completely different, more expensive item, is rare in hospitality. A customer asking for a sandwich is unlikely to take kindly to being asked to buy a steak instead. Cross-selling, the addition of extra items to complement a main order, is a far more effective approach. The sandwich customer is far more likely to be receptive to the suggestion of adding a portion of chips or a coffee to their meal. A useful guide to staff, the ‘Rule of 25’ is a sales principle that suggests that items offered for upsale should add around 25% total value to the order. Our Research – January Sees Sharp Sales Decline

2018 is now two weeks old. January, typically the hospitality industry’s quietest month, is half gone, and the impact to sales for many venues has been dramatic. Trading Style  Trend from Dec (Nov) Late Night -60.8% (-28.2%) Hotels -40.6% (-21.1%) Food-Led Pubs -35.5% (-9.9%) Restaurants -32.8% (-14.7%) Wet-Led Pubs -32.4% (-21.3%) Taking data from our S4Labour software, we analysed trading patterns across hundreds of sites and saw a sharp decline in revenue this month. Sites across all industry sectors have experienced a significant fall in sales between December’s average trading (excluding the week containing Christmas Day) and January to date.  Venues specialising in late night trade have seen the greatest drop, with total revenues falling by 60.8%. Perhaps surprisingly given the ongoing pressure the sector faces, wet-led pubs suffered the smallest decrease in sales, faring marginally better than restaurants and food-oriented pub operations, though still experiencing a 32.4% decline. December’s festive season guarantees increased footfall and revenue for the vast majority of hospitality sites. We often hear from S4Labour users who wish to reset their password, either because they wish to change it or because they cannot remember the original.   Resetting a password is a quick and simple process which can be done by following the process below:  Step One On the S4Labour login page input your email address into the Username field, and click the blue Forgot Password link.    Step Two Clicking the ‘Forgot Password’ link in Step One will trigger an automatic email to be sent to your inbox. This email will contain a link and an eight-digit security code. With the festive season just around the corner, it is important for hospitality businesses to strategically plan for the increased demand during the weeks and months ahead. What we Learned at the Propel Multi Club Autumn Conference

On Wednesday we were fortunate enough to sponsor the final Propel Multi Club Conference of the year. With industry leaders and entrepreneurial talent from a range of sectors scheduled to speak, we were eager to hear what they had to say. We’re Sponsoring the Propel Conference

S4Labour are continuing our sponsorship of Propel events with the final Multi-Club Conference of 2017. The Future Looks Bright for S4Labour’s New Graduates

Following the appointment of three new senior employees, S4Labour are delighted to welcome to the company the four members of our graduate programme for 2017.   The quartet, who took up their positions at our Oxfordshire head office earlier this month, are Ross Atkinson, Ben Nestel, Jess Stacpoole, and George Tuvey. They were selected from a large pool of applicants after displaying in interview the talents deemed necessary to become valuable members of a dynamic, growing business. The programme, now in its second year, will see the graduates rotating through four three-month placements in our account management, sales and marketing, development, and finance teams, concluding in a likely promotion to a permanent role in the department in which they have displayed most aptitude and most enjoyed working. George, fresh from completing an Economics degree at Lancaster University, previously spent a week on work experience with S4Labour. Staffing After Summer – Our Advice

The kids are back at school, there’s a chill to the air, and while we may still be blessed with the odd fine day, autumn is in the air. For most in hospitality, the end of the summer season brings renewed staffing challenges.   With sales likely to drop, tightly controlled labour spend once again becomes the order of the day. But all is not lost; for shrewd operators, this time of year brings opportunities to continue to generate healthy profits and ensure their business is structured from long-term success. A reduction to footfall and takings is likely to mean there will be less demand for staff. However, rather than having to cut employees’ hours – a move that is never popular – for many, the chance to schedule fewer total hours of labour will arise organically. Earlier this year, our study into 23,000 people employed at over 100 organisations found that 89% of all hourly-paid workers in hospitality are under the age of 25. S4Labour Clients Win at Great British Pub Awards

The champagne corks were popping as two S4Labour customers saw off stiff competition to take wins at the Great British Pub Awards 2017.    City Pub Company’s Temple Brew House, in London, came out on top in the prestigious Beer Pub/Bar of the Year category, while Rumba, in Macclesfield, part of DV8 Bars, was crowned a worthy winner of the Turnaround Pub of the Year award. City Pub Company signed up to S4Labour in January 2016, and use the system to control costs and drive sales across all their 33 sites. Co-founder John Roberts is a particular fan, saying “Your labour system is doing wonders at the City Pub Co – well done!”  DV8 became S4Labour clients the same month. We are delighted to announce the appointments of three new senior members of the S4Labour team. Guide to Setting Up Users in S4Labour

As new people join your business, or are promoted internally, there will be a requirement to create new higher level users within S4Labour.  This is a simple process that typically takes under 30 seconds and can be carried out by any Level 5 (head office) level S4Labour user following the steps below.    Step One Hover over the Spanner Icon at the top of the S4Labour screen and select Create New Users, which is the second option on the list.  Step Two You will now see a form with fields into which to input the new user’s details. Fill out these fields with the user’s details. The fields for Forename, Surname, Mobile Phone, Email Address, and Password are mandatory and must be populated.  Step Three The next field in the form is Level. This determines the level of access the user gets to S4Labour. Typically user levels are structured as follows: Level 2 – Assistant Manager Level 3 – General Manager Level 4 – Area Manager Level 5 – Head Office  Select the appropriate level for your new user.  Step Four  Next, you will see three optional settings, which can either be denied or allowed.
